Make Carne Picada Stir-Fry with Vegetables and Noodles

Ingredients:
- 1 lb carne picada (ground beef)
- 1 onion, sliced
- 1 carrot, julienned
- 1 potato, diced
- 1 green bell pepper, sliced
- 2 eggs
- 8 oz noodles of your choice
Instructions:
1. In a large skillet or wok, heat some oil over medium-high heat.
2. Add the sliced onion and cook until translucent.
3. Add the julienned carrot and diced potato, and stir-fry for a few minutes until they start to soften.
4. Push the vegetables to the side of the skillet and add the carne picada to the center. Cook until browned, breaking it up with a spatula.
5. Mix the vegetables and carne picada together in the skillet.
6. Add the sliced green bell pepper and continue to stir-fry for a few more minutes.
7. In a separate pot, cook the noodles according to package instructions. Drain and set aside.
8. Push the meat and vegetable mixture to the side of the skillet again and crack the eggs into the center. Scramble the eggs until cooked through.
9. Mix everything together in the skillet, then add the cooked noodles. Stir well to combine.
10. Season with salt, pepper, and any other desired seasonings.
