Carob Coconut Bran Muffins
Ingredients:
-1 cup wheat bran
-1/2 cup coconut flour
-1/4 cup carob powder
-1 teaspoon baking powder
-1/4 teaspoon salt
-1/4 cup coconut oil, melted
-1/4 cup honey
-1/2 cup almond milk
-1 teaspoon vanilla extract
-1 egg
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with coconut oil.
2. In a large bowl, combine wheat bran, coconut flour, carob powder, baking powder, and salt.
3. In a separate bowl, whisk together coconut oil, honey, almond milk, vanilla extract, and egg.
4. Pour wet ingredients into dry ingredients and stir until just combined.
5. Divide batter evenly among the 12 muffin cups.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
