Roasted Fall Vegetables

Ingredients:

-1 head of cauliflower, cut into florets
-1 small pumpkin, cut into cubes
-2 carrots, peeled and cut into cubes
-2 tablespoons olive oil
-Salt and pepper, to taste

Instructions:

1. Preheat oven to 400 degrees F.

2. Place the cauliflower, pumpkin, and carrots in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss to combine.

3. Spread the vegetables onto a baking sheet lined with parchment paper.

4. Roast in the preheated oven for 25-30 minutes, stirring once halfway through, until the vegetables are tender and lightly browned.

5. Serve warm. Enjoy!
