Carrot and Goat Cheese Salad


- 90g hard goat cheese, crumbled
- 2 large carrots, peeled and grated
- 1 brazil nut, chopped
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon honey
- Salt and pepper, to taste


1. In a large bowl, combine the grated carrots, crumbled goat cheese, and chopped brazil nut.

2. In a separate bowl, whisk together the olive oil, white wine vinegar, honey, salt, and pepper.

3. Pour the dressing over the carrot and goat cheese mixture and toss to combine.

4. Serve the salad chilled or at room temperature. Enjoy!
