Carrot and Tomato Pasta Bake
Ingredients:
- 2 cups of uncooked pasta
- 2 cups of diced tomatoes
- 2 cups of diced carrots
- 2 cups of cubed bread
- 4 eggs
- 1 cup of milk
Instructions:
1. Preheat oven to 350°F.
2. Bring a large pot of salted water to a boil. Add the pasta and cook for 8-10 minutes, or until al dente. Drain and set aside.
3. In a large bowl, combine the tomatoes, carrots, bread, eggs, and milk. Stir until everything is evenly combined.
4. Add the cooked pasta to the bowl and stir until everything is evenly combined.
5. Grease a 9x13 inch baking dish with cooking spray. Pour the pasta mixture into the dish and spread it out evenly.
6. Bake for 25-30 minutes, or until the top is golden brown and the center is set.
7. Let cool for 10 minutes before serving. Enjoy!
