Carrot Cake

Ingredients:

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup grated carrots

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

2. In a medium bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg and salt.

3. In a large bowl, beat together the oil, sugar, eggs and vanilla until light and fluffy.

4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

5. Fold in the grated carrots.

6. Pour the batter into the prepared pan.

7. Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.

8. Allow cake to cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
