Carrot Cake
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 2 cups grated carrots
- 1/2 cup raisins
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg and salt.
3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in milk. Gradually stir the dry ingredients into the wet mixture until just blended. Fold in carrots and raisins.
4. Pour batter into prepared pan. Bake for 30 to 40 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool before serving. Enjoy!
