Carrot Frittata

Ingredients:

- 2 tablespoons olive oil

- 2 cups grated carrots

- 1/2 cup Philadelphia cream cheese, cubed
- 4 eggs
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Heat olive oil in a large skillet over medium heat. Add carrots and cook, stirring occasionally, until softened, about 5 minutes.

3. Add cream cheese and stir until melted.

4. In a medium bowl, whisk together eggs, salt, and pepper.

5. Pour egg mixture into skillet and stir to combine. Cook until eggs are set, about 5 minutes.

6. Transfer skillet to preheated oven and bake until golden brown and set, about 15 minutes.

7. Serve warm. Enjoy!
