Carrot Rice Casserole

Ingredients:

- 2 cups cooked white rice
- 2 cups diced carrots
- 2 cups diced celery
- 2 cups mashed potatoes
- 1/2 cup butter
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine the cooked rice, carrots, celery, mashed potatoes, butter, Parmesan cheese, salt and pepper.

3. Mix until all ingredients are evenly distributed.

4. Grease a 9x13 inch baking dish.

5. Pour the mixture into the baking dish and spread evenly.

6. Bake for 30 minutes, or until the top is golden brown.

7. Serve warm. Enjoy!
