Roasted Chicken with Potatoes and Carrots
Ingredients:
- 2 pounds chicken thighs
- 2 pounds potatoes, peeled and cut into 1-inch cubes
- 2 large carrots, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F.
2. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, paprika, oregano, thyme, salt, and pepper. Mix until all ingredients are evenly coated.
3. Place chicken thighs in a large baking dish. Arrange the potato and carrot mixture around the chicken.
4. Bake for 40 minutes, or until chicken is cooked through and potatoes and carrots are tender.
5. Serve hot. Enjoy!
