Chicken and Carrot Soup

Ingredients:

- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 cups of chicken broth
- 2 cups of cooked, shredded chicken
- 1 teaspoon of dried thyme
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook for about 5 minutes, stirring occasionally, until the onion is softened.

3. Add the carrots and cook for an additional 5 minutes.

4. Pour in the chicken broth and bring to a boil.

5. Reduce the heat to low and add the shredded chicken, thyme, salt, and pepper. Simmer for 10 minutes.

6. Taste and adjust seasoning as needed.

7. Serve the soup hot. Enjoy!
