Peanut Noodle Stir-Fry
Ingredients:
- 8 ounces of noodles
- 2 carrots, peeled and sliced
- 2 tablespoons of peanut butter
- 2 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of freshly grated ginger
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions:
1. Bring a pot of salted water to a boil. Add the noodles and cook according to package instructions.
2. While the noodles are cooking, heat the vegetable oil in a large skillet over medium-high heat. Add the carrots and cook for 3-4 minutes, stirring occasionally, until the carrots are just beginning to soften.
3. Add the garlic and ginger and cook for an additional minute.
4. Drain the noodles and add them to the skillet. Stir in the peanut butter, soy sauce, and sesame oil.
5. Cook for 2-3 minutes, stirring frequently, until the noodles are heated through and the sauce is thickened.
6. Season with salt and pepper to taste. Serve hot. Enjoy!
