Impala and Carrot Rice
Ingredients:
- 1 lb of impala, cubed
- 2 cups of carrots, diced
- 2 cups of white rice
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the impala cubes and cook for about 5 minutes, stirring occasionally.
3. Add the carrots, garlic, cumin, paprika, oregano, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
4. Add the rice and 2 cups of water. Bring to a boil, reduce the heat to low, cover, and simmer for 20 minutes.
5. Remove from heat and let sit for 5 minutes. Fluff with a fork and serve.
