Cashew Broccoli and Mushroom Stir Fry
Ingredients:
- 2 cups of broccoli florets
- 1 cup of cashews
- 1 cup of sliced mushrooms
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 teaspoon of sesame oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the garlic and stir for about 30 seconds.
3. Add the broccoli and mushrooms and stir-fry for about 5 minutes, or until the vegetables are tender.
4. Add the cashews and stir-fry for an additional 2 minutes.
5. Add the soy sauce and sesame oil and stir-fry for an additional minute.
6. Season with salt and pepper to taste.
7. Serve hot. Enjoy!
