Cauliflower and Blue Cheese Tart

Ingredients:

1 sheet of puff pastry

1 head of cauliflower

3 tablespoons of tahini

1/2 cup of crumbled blue cheese

1 egg, beaten

1 tablespoon of lemon juice

Instructions:

1. Preheat oven to 375°F (190°C).

2. Cut the cauliflower into small florets and place them in a baking dish.

3. Drizzle the tahini over the cauliflower and mix until evenly coated.

4. Bake for 15 minutes.

5. Remove from oven and let cool.

6. On a lightly floured surface, roll out the puff pastry to a 12-inch (30 cm) circle.

7. Place the pastry on a parchment-lined baking sheet.

8. Spread the cauliflower and blue cheese over the pastry, leaving a 1-inch (2.5 cm) border.

9. Brush the border with the beaten egg.

10. Bake for 20 minutes, or until the pastry is golden brown.

11. Drizzle with lemon juice before serving.
