Cauliflower Tahini Bowl
Ingredients:
-1 head of cauliflower, cut into florets
-1/4 cup tahini
-2 tablespoons olive oil
-1 tablespoon lemon juice
-1 teaspoon garlic powder
-1 teaspoon cumin
-1/2 teaspoon chili powder
-Salt and pepper, to taste
-1/4 cup chopped parsley
Instructions:
1. Preheat oven to 400 degrees F.
2. Place cauliflower florets on a baking sheet and drizzle with olive oil. Sprinkle with garlic powder, cumin, chili powder, salt and pepper.
3. Roast in the oven for 25 minutes, or until golden and tender.
4. Meanwhile, in a small bowl, whisk together tahini, lemon juice, and 2 tablespoons of water.
5. Once the cauliflower is done, transfer to a bowl and top with tahini sauce. Sprinkle with parsley and serve. Enjoy!
