Huevos Rancheros

Ingredients:

- 2 large eggs
- 2 tablespoons of shredded cheese
- 1/2 cup of cooked white rice
- 1/2 cup of cooked choclo (or corn)
- 1/2 cup of diced tomatoes
- 1/4 cup of diced onion

Instructions:

1. Preheat oven to 350 degrees F.

2. Grease a baking dish with cooking spray.

3. In a medium bowl, combine the cooked rice, choclo, tomatoes, and onion.

4. Pour the mixture into the baking dish and spread evenly.

5. Make two wells in the mixture and crack the eggs into each well.

6. Sprinkle the shredded cheese over the top of the eggs.

7. Bake in the preheated oven for 20 minutes, or until the eggs are cooked through and the cheese is melted and bubbly.

8. Serve hot with your favorite toppings. Enjoy!
