Vegetable Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, carrots, and celery and cook for 5 minutes, stirring occasionally.
3. Add the vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
4. Remove from heat and let cool slightly.
5. Use an immersion blender to blend the soup until smooth.
6. Serve warm. Enjoy!
