Chicken and Rice Casserole
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 2 cups cooked chicken, diced
- 2 cups cooked rice
- 2 cups cooked pasta
- 2 eggs, lightly beaten
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, and bell pepper and cook until softened, about 5 minutes.
3. Add tomato and cook for an additional 2 minutes.
4. Add chicken, rice, and pasta and cook for an additional 5 minutes.
5. In a large bowl, combine egg, cheese, and cooked ingredients. Season with salt and pepper to taste.
6. Transfer mixture to a greased 9x13 inch baking dish.
7. Bake for 30 minutes, or until golden brown and bubbling.
8. Serve warm. Enjoy!
