Avocado Rice and Potato Gratin

Ingredients:

- 2 avocados, peeled and diced
- 2 cups cooked white rice
- 2 large potatoes, peeled and thinly sliced
- 4 ounces goat cheese, crumbled
- 1/4 cup olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. Grease a 9x13 inch baking dish with olive oil.

3. Layer the potatoes in the bottom of the dish.

4. Sprinkle with salt and pepper.

5. Top with the cooked rice.

6. Layer the avocado over the rice.

7. Sprinkle with the crumbled goat cheese.

8. Drizzle with the remaining olive oil.

9. Bake for 30 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

10. Serve warm. Enjoy!
