Cheesy Bacon and Egg Breakfast Casserole
Ingredients:
- 4 slices of bacon, diced
- 2 cloves garlic, minced
- 2 tablespoons ghee
- 4 eggs
- 1/4 cup milk
- 1/2 cup shredded cheese
- 1/4 cup chopped nuts
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet over medium heat, cook the bacon until crispy. Remove from heat and set aside.
3. In the same skillet, heat the ghee and add the garlic. Cook for 1-2 minutes until fragrant.
4. In a large bowl, whisk together the eggs, milk, cheese, nuts, cucumber, tomato, and salt and pepper.
5. Pour the egg mixture into the skillet and cook until the eggs are just set, stirring occasionally.
6. Sprinkle the bacon over the top of the egg mixture and transfer the skillet to the preheated oven.
7. Bake for 15-20 minutes or until the eggs are cooked through.
8. Serve warm and enjoy!
