Recipe Name: Cheesy Baked Eggplant

Ingredients:
- 1 large eggplant, sliced into rounds
- 1 cup of shredded cheese (such as mozzarella or cheddar)
- Salt and pepper to taste
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1/2 cup of crumbled feta cheese
- 1/2 cup of heavy cream
- 1/4 cup of milk

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Place the sliced eggplant rounds on a baking sheet and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.
3. In a skillet, sauté the diced onion and minced garlic until softened.
4. In a small bowl, mix together the heavy cream and milk.
5. Pat the eggplant rounds dry with a paper towel and arrange them in a baking dish.
6. Sprinkle the sautéed onion and garlic over the eggplant rounds.
7. Pour the cream and milk mixture over the eggplant.
8. Sprinkle the shredded cheese over the top.
9. Crumble the feta cheese on top of the shredded cheese.
10. Season with salt and pepper to taste.
11. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
13. Serve hot and enjoy!
