Cheesy Baked Potato and Egg Casserole
Ingredients:
- 4 large potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 teaspoon salt
- 2 cups cooked pasta
- 4 eggs
- 1/2 cup shredded cheese
- 2 slices of bread, cubed
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, toss together potatoes, olive oil, onion, bell pepper, garlic, tomato, and salt.
3. Spread the mixture in a 9x13 inch baking dish.
4. Bake for 25 minutes, stirring occasionally.
5. Remove from oven and stir in cooked pasta.
6. In a separate bowl, whisk together eggs and cheese.
7. Pour egg mixture over the potatoes and pasta.
8. Top with cubed bread.
9. Bake for an additional 25 minutes, or until eggs are set and top is golden brown.
10. Serve warm. Enjoy!
