Cheesy Beef and Broccoli Tacos

Ingredients:

1 lb ground beef
2 tablespoons taco seasoning
1/4 cup mayonnaise
4 slices of bread
2 potatoes, peeled and diced
1 onion, diced
4 ounces cream cheese, softened
1 cup cheddar cheese, shredded
2 cups broccoli, chopped

Instructions:

1. Preheat oven to 375°F.

2. In a large skillet over medium-high heat, cook ground beef until browned. Drain any excess fat.

3. Add taco seasoning and mayonnaise to the ground beef and stir to combine.

4. Place the bread slices on a baking sheet and bake for 8 minutes.

5. Meanwhile, in a large pot, bring potatoes and onions to a boil. Reduce heat and simmer for 10 minutes or until potatoes are tender.

6. Drain potatoes and onions and return to the pot. Add cream cheese and cheddar cheese and stir until melted.

7. Add the ground beef mixture and broccoli to the pot and stir to combine.

8. Spoon the beef and broccoli mixture onto the toasted bread slices and serve. Enjoy!
