Cheesy Beef and Zucchini Rice Casserole
Ingredients:
- 1 cup rice
- 1 cup shredded cheese
- 1 onion, diced
- 1 tomato, diced
- Salt and pepper to taste
- 1 zucchini, sliced
- 1 lb ground beef
- 1 packet taco seasoning
- 2 tbsp butter
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a skillet, melt the butter over medium heat. Add the diced onion and cook until translucent.
4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
5. Stir in the taco seasoning and cook for another 2-3 minutes.
6. In a large mixing bowl, combine the cooked rice, beef mixture, diced tomato, and sliced zucchini. Season with salt and pepper.
7. Transfer the mixture to a baking dish and top with shredded cheese.
8. Cover the dish with foil and bake for 20 minutes.
9. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
10. Serve hot and enjoy!
