Cheesy Broccoli and Chicken Frittata
Ingredients:
- 2 cups cooked rotisserie chicken, shredded
- 4 eggs
- 2 cups broccoli florets, chopped
- 1 small onion, diced
- 1/2 teaspoon black pepper
- 1 cup shredded cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, whisk together eggs, garlic, salt, and pepper.
3. Heat a large oven-safe skillet over medium-high heat. Add onion and broccoli and cook until vegetables are softened, about 5 minutes.
4. Add chicken to the skillet and stir to combine.
5. Pour egg mixture over the vegetables and chicken. Stir to combine.
6. Sprinkle cheese over the top of the frittata.
7. Place skillet in the preheated oven and bake for 20 minutes, or until the eggs are set.
8. Serve warm. Enjoy!
