Cheesy Broccoli and Potato Soup
Ingredients:
- 2 tablespoons butter
- 1 onion, diced
- 2 celery stalks, diced
- 2 potatoes, peeled and diced
- 2 cups broccoli florets
- 4 cups vegetable broth
- 2 cups milk
- Salt and pepper, to taste
Instructions:
1. In a large pot, melt the butter over medium heat.
2. Add the onion and celery and cook until softened, about 5 minutes.
3. Add the potatoes and broccoli and cook for another 5 minutes.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat to a simmer and cook for 15 minutes, or until the potatoes are tender.
6. Add the milk and season with salt and pepper.
7. Simmer for 5 more minutes.
8. Serve hot. Enjoy!
