Make Cheesy Carrot Basmati Rice

Ingredients:
- 1 cup basmati rice
- 2 cups water
- 1 large carrot, grated
- 1 small onion, finely chopped
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
2. In a medium saucepan, heat some oil over medium heat. Add the chopped onion and sauté until translucent.
3. Add the grated carrot to the saucepan and cook for a few minutes until slightly softened.
4. Add the basmati rice to the saucepan and stir to combine with the vegetables.
5. Pour in the water and season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
6. Once the rice is cooked, remove the saucepan from heat and stir in the shredded cheese until melted and well combined.
