Cheesy Chicken and Potato Casserole
Ingredients:
- 8 boneless, skinless chicken thighs
- 4 ounces cream cheese
- 4 tablespoons butter
- 1/2 cup sour cream
- 2 eggs
- 1 onion, diced
- 1 red pepper, diced
- 2 potatoes, diced
- 1 can tomato sauce
- 1 can cream of mushroom soup
Instructions:
1. Preheat oven to 350 degrees F.
2. Grease a 9x13 inch baking dish.
3. Place chicken thighs in the baking dish.
4. In a medium bowl, mix together cream cheese, butter, sour cream, and eggs until smooth.
5. Spread the cream cheese mixture over the chicken thighs.
6. Top with diced onions, peppers, and potatoes.
7. In a separate bowl, mix together tomato sauce and cream of mushroom soup.
8. Pour the tomato sauce mixture over the top of the casserole.
9. Cover the baking dish with foil and bake for 45 minutes.
10. Remove foil and bake for an additional 15 minutes, or until chicken is cooked through and potatoes are tender.
11. Serve and enjoy!
