Cheesy Chicken and Rice
Ingredients:
- 2 cups of cooked rice
- 2 cups of cooked, diced chicken
- 1 cup of shredded cheese
- 1 teaspoon of your favorite spices (cumin, paprika, garlic powder, etc.)
- 2 cups of cooked, diced potatoes
- 1 cup of cooked beans
- 1 cup of plain yogurt
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, combine cooked rice, chicken, cheese, spices, potatoes, and beans. Mix until ingredients are evenly distributed.
3. Grease a 9x13 inch baking dish with cooking spray.
4. Pour the mixture into the baking dish and spread it out evenly.
5. Top with yogurt and spread it out evenly.
6. Bake for 25-30 minutes, or until cheese is melted and bubbly.
7. Serve and enjoy!
