Cheesy Chicken and Rice

Ingredients:

- 2 cups of uncooked rice
- 2 cups of chicken, cooked and diced
- 1 cup of shredded cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large pot, bring 2 cups of water to a boil. Add the rice and cook for 10-15 minutes, or until the rice is cooked through.

3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until the chicken is cooked through.

4. Add the cooked rice to the skillet with the chicken and stir to combine.

5. Add the shredded cheese and stir until the cheese is melted and the ingredients are well combined.

6. Transfer the mixture to a greased baking dish.

7. Bake for 20 minutes, or until the cheese is melted and bubbly.

8. Serve hot and enjoy!
