Cheesy Chicken and Rice

Ingredients:

- 2 cups uncooked white rice
- 2 cloves garlic, minced
- 1 onion, diced
- 2 bell peppers, diced
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 cups chicken stock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese

Instructions:

1. Preheat oven to 350°F.

2. In a large skillet over medium heat, cook garlic, onion, and bell peppers until softened, about 5 minutes.

3. Add chicken cubes and cook until lightly browned, about 5 minutes.

4. Add chicken stock, salt, and pepper and bring to a boil.

5. Add uncooked rice and stir to combine.

6. Transfer mixture to a 9x13 inch baking dish.

7. Cover with foil and bake in preheated oven for 25 minutes.

8. Remove from oven and sprinkle with shredded cheddar cheese.

9. Return to oven and bake, uncovered, for an additional 10 minutes.

10. Serve hot. Enjoy!
