Cheesy Chicken and Rice Casserole

Ingredients:
2 cups cooked brown rice
2 cups cooked, diced chicken
2 cups chicken stock
1/2 cup diced onion
2 tablespoons butter
2 cloves garlic, minced
1/2 cup diced carrots
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup half and half
2 tablespoons mayonnaise

Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, melt butter over medium heat. Add onions and garlic and cook until softened, about 5 minutes.
3. Add carrots and cook for an additional 2 minutes.
4. Add chicken and cook until heated through.
5. Add cooked rice and chicken stock and stir to combine.
6. In a medium bowl, mix together sour cream, cheddar cheese, half and half, and mayonnaise.
7. Pour the mixture into the skillet and stir to combine.
8. Transfer the mixture to a 9x13 baking dish.
9. Bake for 25-30 minutes, or until the top is golden brown and bubbly.
10. Serve warm. Enjoy!
