Make Cheesy Chicken and Rice Casserole
Recipe Name: Cheesy Chicken and Rice Casserole
Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste
- 1 potato, thinly sliced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until browned. Remove from the skillet and set aside.
3. In the same skillet, sauté the diced onion and minced garlic until fragrant.
4. Add the rice and cook for a few minutes until slightly toasted.
5. Stir in the diced tomato and cooked chicken. Season with salt to taste.
6. Transfer the mixture to a greased casserole dish.
7. In a bowl, whisk the eggs and pour them over the chicken and rice mixture.
8. Sprinkle the shredded cheese on top and arrange the thinly sliced potato on top of the cheese.
9. Cover the casserole dish with foil and bake in the preheated oven for 30 minutes.
10. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
