Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 eggs
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add a bit more oil if needed and sauté the chopped onion and minced garlic until they are soft and fragrant.
4. Add the rice to the skillet and cook for a few minutes until slightly toasted.
5. Stir in the diced tomato and cooked chicken. Season with salt to taste.
6. Transfer the mixture to a baking dish and spread it out evenly.
7. In a bowl, whisk the eggs and pour them over the chicken and rice mixture.
8. Sprinkle the shredded cheese on top.
9. Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
10. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden brown.
