Cheesy Chicken and Rice Casserole
Ingredients:
- 1 cup of rice
- 1 lb of chicken breast, diced
- 1 cup of shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 tomato, diced
- Salt to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, heat some oil over medium heat and sauté the diced chicken until cooked through. Remove from skillet and set aside.
4. In the same skillet, add a bit more oil and sauté the diced onion, bell pepper, and minced garlic until softened.
5. Add the diced tomato and cooked chicken back to the skillet. Season with salt and stir to combine.
6. In a greased baking dish, layer the cooked rice on the bottom.
7. Pour the chicken and vegetable mixture over the rice.
8. Sprinkle the shredded cheese on top.
9. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
10. Serve hot and enjoy!
