Cheesy Chicken and Rice Casserole
Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup shredded cheese
- 1 onion, chopped
- 1 bell pepper, diced
- 1 cup cooked pasta
- Salt, to taste
- 1 tomato, diced
- 2 cloves garlic, minced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a skillet, cook the diced chicken until fully cooked. Season with salt and set aside.
4. In a bowl, beat the eggs and mix in the cooked pasta, shredded cheese, chopped onion, diced bell pepper, diced tomato, and minced garlic.
5. Add the cooked rice and chicken to the mixture and stir well to combine.
6. Transfer the mixture to a greased baking dish and spread it out evenly.
7. Cover the dish with foil and bake in the preheated oven for 30 minutes.
8. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown and bubbly.
9. Serve hot and enjoy!
