Make Cheesy Chicken and Rice Casserole
Recipe Name: Cheesy Chicken and Rice Casserole
Ingredients:
- 1 cup of rice
- 1 can of diced tomatoes
- 1 onion, chopped
- 2 chicken thighs, boneless and skinless
- 2 eggs
- 1 cup of shredded cheese
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a skillet, cook the chopped onion until translucent.
4. Add the chicken thighs to the skillet and cook until browned on both sides.
5. Stir in the diced tomatoes and let simmer for a few minutes.
6. In a bowl, beat the eggs and mix in half of the shredded cheese.
7. In a casserole dish, layer the cooked rice, chicken and tomato mixture, and the egg and cheese mixture.
8. Top with the remaining shredded cheese.
9. Cover the casserole dish with foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
