Recipe Name: Cheesy Chicken and Rice Casserole

Ingredients:
- 1 cup of rice
- 1 lb of chicken breast, diced
- 1 cup of shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 tomato, diced
- Salt to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, cook the diced chicken over medium heat until fully cooked.
4. Add the diced onion and bell pepper to the skillet and sauté until softened.
5. Stir in the diced tomato and cook for another 2-3 minutes.
6. Season the chicken and vegetable mixture with salt to taste.
7. In a large mixing bowl, combine the cooked rice with the chicken and vegetable mixture.
8. Transfer the mixture to a baking dish and sprinkle the shredded cheese on top.
9. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
10. Remove from the oven and let it cool slightly before serving.
