Ingredients:
- 2 chicken breasts, diced
- 2 cups cooked rice
- 1 onion, diced
- 1 tomato, diced
- 4 eggs
- 1 bell pepper, diced
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 350°F (180°C).
2. In a skillet, cook the diced chicken until it is fully cooked and slightly browned. Season with salt and pepper.
3. In a separate skillet, sauté the diced onion, bell pepper, and tomato until they are softened.
4. In a large mixing bowl, beat the eggs and season with salt and pepper.
5. Add the cooked rice, cooked chicken, sautéed vegetables, and half of the shredded cheese to the bowl with the beaten eggs. Mix well to combine.
6. Transfer the mixture to a baking dish and spread it out evenly.
7. Sprinkle the remaining shredded cheese on top of the mixture.
8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
