Make Cheesy Chicken and Rice Casserole

Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste
- 1 cup pasta
- 1 potato, diced
- 1 can northern beans, drained and rinsed
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, sauté the diced onion, bell pepper, and minced garlic until softened.
4. Add the diced tomato and cook for another 2-3 minutes.
5. Stir in the cooked chicken, rice, pasta, potato, and northern beans. Season with salt to taste.
6. Transfer the mixture to a baking dish and spread it out evenly.
7. In a separate bowl, whisk the eggs and pour them over the chicken and rice mixture.
8. Sprinkle the shredded cheese on top.
9. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
10. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
