Recipe Name: Cheesy Chicken and Rice Casserole

Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste
- 1 cup cooked pasta
- 1 potato, diced
- 1 can northern beans, drained and rinsed

Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.

3. In the same skillet, add a little more oil if needed and sauté the diced onion, bell pepper, and garlic until softened.

4. Add the diced tomato and cook for a few more minutes until the tomato is softened.

5. Stir in the cooked pasta, diced potato, and northern beans. Season with salt to taste.

6. In a separate bowl, beat the eggs and mix in the cooked rice.

7. Spread the rice and egg mixture evenly in a baking dish.

8. Layer the cooked chicken on top of the rice mixture.

9. Pour the vegetable and bean mixture over the chicken.

10. Sprinkle the shredded cheese on top.

11. Cover the baking dish with foil and bake in the preheated oven for about 30 minutes.

12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
