Recipe Name: Cheesy Chicken and Rice Casserole

Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 tbsp hot chili paste
- 4 slices of bread, cubed
- 1 can cream of chicken soup
- 1 cup milk
- Salt and pepper to taste

Instructions:

1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a large skillet, cook the diced chicken until it is no longer pink. Season with salt and pepper.
3. In a separate pot, cook the rice according to package instructions.
4. In a mixing bowl, beat the eggs and stir in the shredded cheese.
5. Add the diced onion, bell pepper, hot chili paste, and cubed bread to the egg and cheese mixture. Mix well.
6. In a small saucepan, heat the cream of chicken soup and milk until well combined.
7. In the greased baking dish, layer half of the cooked rice, followed by the cooked chicken.
8. Pour the egg and cheese mixture over the chicken layer.
9. Pour the cream of chicken soup mixture over the casserole.
10. Top with the remaining rice and sprinkle some extra cheese on top.
11. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
12. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
13. Let the casserole cool for a few minutes before serving.
