Cheesy Chicken and Rice with Pinto Beans

Ingredients:

-1 cup of uncooked rice
-1 can of pinto beans
-1 large tomato, diced
-1 cup of cooked, shredded chicken
-1 cup of shredded cheese
-2 tablespoons of olive oil
-Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees Fahrenheit.

2. In a large skillet, heat olive oil over medium-high heat.

3. Add the diced tomato and cook for 3 minutes.

4. Add the cooked, shredded chicken and cook for an additional 3 minutes.

5. Add the pinto beans and cook for an additional 2 minutes.

6. Add the uncooked rice and stir to combine.

7. Transfer the mixture to a 9x13 inch baking dish.

8. Sprinkle the shredded cheese over the top.

9. Bake in preheated oven for 25 minutes.

10. Remove from oven and let cool for 5 minutes before serving. Enjoy!
