Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced

- Salt, to taste
- 1 zucchini, sliced
- 1 cup string beans, chopped
- 1 tsp paprika
- 1 avocado, sliced
- 4 oz Camembert cheese, sliced
- 1 cup coconut milk
- 8 oz pasta
- 2 potatoes, peeled and diced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, cook the diced chicken until browned and cooked through. Remove from the skillet and set aside.
4. In the same skillet, sauté the onion, bell pepper, and garlic until softened.
5. Add the diced tomato, zucchini, and string beans to the skillet and cook until slightly tender.
6. Season the vegetables with salt and paprika.
7. In a large mixing bowl, whisk together the eggs and coconut milk.
8. Add the cooked rice, chicken, sautéed vegetables, and shredded cheese to the egg mixture. Mix well to combine.
9. Transfer the mixture to a greased baking dish.
10. Top the casserole with sliced avocado, Camembert cheese, and diced potatoes.
11. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
