Make Cheesy Chicken and Vegetable Pasta Bake
Recipe: Cheesy Chicken and Vegetable Pasta Bake
Ingredients:
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup grated cheese
- 1 onion, diced
- 8 oz pasta
- Salt, to taste
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup bulgur
- 1 cup quinoa
- 1 cup milk
- 2 tbsp butter
- 2 tbsp olive oil
- 2 potatoes, sliced
- 1/2 cup cooking cream
- 1 zucchini, sliced
- 1 eggplant, sliced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the pasta according to package instructions, then set aside.
3. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned. Remove from skillet and set aside.
4. In the same skillet, sauté diced onion and minced garlic until fragrant.
5. Add diced tomatoes, broccoli florets, sliced zucchini, and sliced eggplant. Cook until vegetables are tender.
6. In a separate pot, cook bulgur and quinoa according to package instructions.
7. In a saucepan, heat butter over medium heat. Add milk and cooking cream, stirring until well combined.
8. Beat the eggs in a bowl and gradually add the milk mixture, stirring constantly.
9. Add grated cheese to the mixture and stir until melted.
10. In a large baking dish, layer the cooked pasta, cooked chicken, cooked vegetables, cooked bulgur and quinoa, and sliced potatoes.
11. Pour the cheese sauce over the layers, ensuring everything is well coated.
12. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
13. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
