Recipe Name: Cheesy Chicken and Vegetable Rice Bake

Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 potatoes, peeled and diced
- Salt and pepper to taste
- 1 cup shredded cheese
- 1 onion, diced
- 1 carrot, diced

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, cook the diced chicken until browned. Season with salt and pepper to taste.
3. Add the diced potatoes, onion, and carrot to the skillet. Cook until the vegetables are slightly softened.
4. In a separate pot, cook the rice according to package instructions.
5. In a greased baking dish, layer the cooked rice on the bottom.
6. Spread the chicken and vegetable mixture over the rice.
7. Sprinkle the shredded cheese on top of the chicken and vegetables.
8. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
9. Remove from the oven and let it cool slightly before serving.
