Recipe Name: Cheesy Chicken Enchiladas

Ingredients:
- 1 lb chicken breast, cooked and shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 lime, juiced
- Salt and pepper to taste
- 1 cup shredded cheese
- 1/2 cup Philadelphia cream cheese
- 1/4 cup chopped coriander
- 1/4 cup chopped basil
- 1 tbsp butter
- 1 tbsp olive oil
- 6 tortillas

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a skillet, heat olive oil and sauté the diced onion and minced garlic until fragrant.
3. Add the shredded chicken to the skillet and season with salt and pepper. Cook for 5 minutes.
4. Stir in the diced tomato and cook for another 2 minutes.
5. Add the lime juice, chopped coriander, and basil to the skillet. Mix well and remove from heat.
6. In a separate saucepan, melt the butter and Philadelphia cream cheese over low heat until smooth.
7. Spread a spoonful of the cream cheese mixture onto each tortilla.
8. Divide the chicken mixture evenly among the tortillas and roll them up.
9. Place the rolled tortillas in a baking dish, seam side down.
10. Sprinkle the shredded cheese over the top of the enchiladas.
11. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
12. Serve hot and enjoy your cheesy chicken enchiladas!
