Recipe: Cheesy Chicken Fried Rice

Ingredients:
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1/2 cup shredded cheese
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Optional: chopped vegetables like bell peppers, peas, or carrots

Instructions:
1. Heat vegetable oil in a large skillet over medium heat.
2. Add the diced chicken to the skillet and cook until heated through.
3. Push the chicken to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
4. Mix the chicken and eggs together in the skillet.
5. Add the cooked rice to the skillet and stir to combine with the chicken and eggs.
6. Pour soy sauce over the rice mixture and stir well to coat.
7. Add the shredded cheese to the skillet and stir until the cheese is melted and everything is well combined.
8. Season with salt and pepper to taste.
9. If using, stir in the chopped vegetables at this point.
10. Cook for an additional 2-3 minutes until everything is heated through.
11. Serve hot and enjoy your delicious Cheesy Chicken Fried Rice!
