Make Cheesy Chicken Fried Rice

Recipe Name: Cheesy Chicken Fried Rice

Ingredients:
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1/2 cup shredded cheese
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Optional: chopped vegetables like bell peppers, peas, carrots

Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the diced chicken to the skillet and cook until heated through.
3. Push the chicken to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
4. Add the cooked rice to the skillet and stir to combine with the chicken and eggs.
5. Pour the soy sauce over the rice mixture and stir well to evenly distribute.
6. If using, add the chopped vegetables to the skillet and cook until they are tender.
7. Sprinkle the shredded cheese over the top of the rice mixture and stir until the cheese is melted and everything is well combined.
8. Season with salt and pepper to taste.
